Avocado Mousse





2 cups ripe avocado (2 to 3 large avocados)

1 1/2 cups pineapple juice and pulp

Zest of 1 lime (about 1 teaspoon)

1/4 cup fresh lime juice

1/4 cup maple syrup

2 tbsp collagen hydrosolate

Pinch of sea salt

3 leaves of mint


  1. Place all the ingredients in a blender or food processor and process on high speed until fully combined, frothy and thick

  2. Serve and enjoy
